Assassin's Creed Origins is the entry that rebuilt the series as a role-playing game, and it is set in Ptolemaic Egypt at the point the Roman Republic is closing in. You play Bayek, a Medjay whose personal grievance ends up founding the Brotherhood.

The combat was rewritten around hitboxes and weapon weight rather than counter prompts, and the map is enormous - from Alexandria and the Nile Delta down to the desert and the pyramids. The optional Discovery Tour turns the whole thing into a guided history walk with no combat.
