Assassin's Creed Rogue is the one where you play a Templar. Shay Cormac starts as an Assassin, loses faith in the Brotherhood for reasons the game takes seriously, and spends the rest of it hunting his former colleagues.

It reuses the naval combat from Black Flag and moves it to the North Atlantic, where icebergs and freezing water become hazards in their own right. Being hunted by Assassins rather than doing the hunting is a genuinely different experience, and the remaster cleans it up considerably.
